The Topaz is a medium-sized apple from a cross between the varieties “Rubin” and “Vanda”. It has a smooth peel with a yellow base color which often exhibits large shares of red or orange-red stripes. Its pulp is crisp and beautifully cream-colored. The Topaz’ taste is juicy and accented by acidity and is described as “crisp and crunchy”.
